It’s that time of year again when everyone’s garden is plentiful. This recipe is a
good way to use up all those extra cucumbers. Our garden did really well this year,
so I had lots of extra cucumbers to make this recipe. Freezer Pickles have good
flavour, are colorful, and stay crisp. Hope you Enjoy.
7 cups sliced cucumbers (with skin on)
1 large onion, sliced
1 cup thinly sliced peppers, seeded; (I use colourful peppers which look pretty)
1 tbsp coarse Pickling salt
1/2 tsp celery seed
1 cup white vinegar
2 cups white sugar
DIRECTIONS: Photo Submitted
Combine all ingredients in a bowl. Stir well. Cover. Refrigerate for 3 days stirring every day. On
your third day pack into freezer containers, cover with brine within 1 inch from the top. Freeze.
Thaw before serving.
Keeps in the fridge for at least 8 weeks.

Makes 3 pints.
