This recipe I’ve been making for a long time. It’s easy and comes together quite fast for those last-minute ideas for dessert.
This recipe keeps in the fridge for a good part of a week because it’s moist. Hope you give it a try.

CARROT CAKE

Carrot Cake Ingredients
Carrot Cake Ingredients Cream Cheese Icing
2 cups flour 1 brick cream cheese
1 1/2 tsp baking soda
1 tsp vanilla
2 tsp baking powder
1 tsp salt 3 cups icing sugar
2 cups carrots, shredded Walnuts ( optional )
2 cups white sugar
14 oz crushed pineapple
1 cup oil

Directions:
Preheat oven to 350 ̊ F.
Sift together the flour, baking soda, baking powder, and salt. Set aside.
In a separate bowl whisk the eggs and white sugar together. Stir in the oil, crushed pineapple, and carrots.
Then add the dry ingredients to the wet ingredients, stir to combine.
Pour into a 9 x 13 pan lined with parchment paper or if you like 2 - 9-inch round cake pans.
Bake for 35 to 40 minutes or until the cake tester comes out clean. Once it’s cooled, remove from the pan, set aside until you are ready to add the cream
cheese icing. Make sure the cake is completely cool or your icing will melt.
To make the icing use a hand mixer, cream the cream cheese until no lumps appear, then add vanilla and slowly add sifted icing sugar until you get the
right consistency you like to frost your cake. Some people like soft icing, some like it thicker, so it’s ok to add more icing sugar if you like. Topping
with walnuts is optional.
